Stories From Behind the Grill and Beyond: An Evening With Our Crew

We believe every burger has a story, and each bite is a little journey that starts long before the grill. In this post we pull back the curtain on a regular evening at our place.

Before the doors open

Prep starts hours before the first order. Onions are sliced, pickles are drained, sauces are mixed and tasted, and the beef is portioned and pressed. None of it is glamorous, but it is the reason a burger can reach your table in minutes.

The rush

Between six and eight the kitchen runs on rhythm. One cook works the grill, another builds and wraps, and the servers keep the dining room moving. Orders are called out loud, and every plate gets a last look before it leaves the pass.

After the last order

When the grill goes quiet, the crew cleans down, writes up what ran low, and eats together. That meal is often where the next special gets its start.
